Additives and Preservatives

What is erythorbic acid that is on the label of a jar of applesauce?

Rating: 77

It is an antioxidant, a curing accelerator, and a preservative. It is used in fruits to prevent browning and in cured meat products for curing. It is an approved additive and so when used properly is safe.
