Is this recipe safe? Cook meringue for 2 minutes, turn oven off and leave overnight in oven. FORGOTTEN COOKIES Ingredients: 2 egg whites 1/4 cup white sugar 1 cup chocolate chips 1 pinch salt 1 teaspoon vanilla Instructions: Preheat oven to 325F. Beat egg whites with the salt until foamy. Slowly add sugar, one tablespoon at a time, beating after each addition until the meringue stands in stiff peaks. Stir in vanilla and fold in chocolate chips. Drop by teaspoonfuls on a lined baking sheet and place in a preheated over. After 2 minutes, turn off the oven. Leave meringue in oven overnight. Remove from pan and store in cookie tin lined with paper towel. Makes three dozen cookies.

No. This recipe is not safe as written. The following modifications are needed for this recipe. The cookies should be baked in a 350ºF oven until they are lightly browned, about 12 minutes. After they are baked, remove from the oven and let cool. This extended cooking time should be sufficient for the destruction of Salmonella, which might be in the egg whites. Salmonella is usually not found in egg whites.
