Yellow "stuff" has formed in sugar in which a vanilla bean has been stored. Is the sugar safe to eat?
Do not split the vanilla bean if it is stored in sugar. Also, dry the bean by placing it in the sugar to preserve it. Therefore, I believe the granular film is simply the result of a reaction between the water (due to the split bean), the sugar, and perhaps a pigment from the bean or another compound.
