Do you have a sauerkraut recipe that is made with something other than salt?

Sauerkraut is a fermented product that uses salt in the fermentation process. Therefore, it is impossible to make sauerkraut without salt. If vinegar were added to the chopped cabbage, the product would be pickled cabbage rather than sauerkraut.
