Why does canned corn turn dark?

Corn turns a brownish yellow when processed because some of the sugar caramelizes. The sweeter the corn is, the greater the chance for browning. The long processing time required for corn processed in quart jars would cause it to darken more than corn packed in pint jars. Although unattractive, the corn is safe to eat if properly processed.
