Can I successfully can pie fillings at home?

Instructions for making several types of thickened pie filling that may be canned successfully are given in So Easy to Preserve. These fillings use a special starch, Clear Jel,that does not break down upon processing. NOTE: This starch can also be used for making thickened fillings for freezing.
