What should I do if the canning process is interrupted?

If for some reason the processing time is interrupted while food is being processed (power or equipment failure, emergency to attend to, etc.), the food must be reprocessed for the full length of time. If the jars were allowed to cool to the point that a vacuum seal developed, a new lid should be used for the second processing.
