What is miso?

Miso is fermented soybean paste. In addition to soybeans, it contains salt and one or more grains, and is fermented with a nontoxic mold. Since a variety of grains and molds are used, the resulting miso will vary in color, texture, and flavor. It is commonly used as broth flavoring for soup. Miso is usually available in plastic packages and has been pasteurized. It keeps in the refrigerator for several months.
