What makes pickles hollow?

Hollow pickles occur more often with fermented pickles than with fresh-packed pickles. During fermentation, some microorganisms produce carbon dioxide. This causes some cucumbers to bloat. Growing conditions can also cause the cucumbers to be hollow. If cucumbers are held several days before starting the pickling process, they may develop hollow centers.
