What types of containers are appropriate for brining pickles?
Food-grade plastic containers, unchipped enamel-lined pans, glass or stone crocks are recommended for fermenting vegetables or cucumbers. Do not use plastic pails or trash cans, as these containers are not food-grade plastics.
Stainless steel and aluminum containers will become pitted with prolonged contact with salt solutions.
