Can I make my own vanilla extract?

Vanilla extract can be made at home. Finely chop one vanilla bean and place it in a jar with a tight fitting lid. Add 3/4-cup vodka or brandy and seal. Shake the jar well. Store the extract for about one month, or until it is nicely fragrant, shaking it every day. Now strain it though a coffee filter. The finished product will probably not be as strong as the purchased vanilla extract so use more than the recipe states.
