What is dry storage yeast?

Active dry yeast should be stored in a cool dry place. To control the temperature, refrigerator storage is suggested. It may also be stored in the freezer. The expiration date is the date past that the activity of the yeast may have diminished. You can test the activity by putting it in some warm water. If it bubbles, the yeast is still active. After the expiration date the yeast product may rise slower, but it is perfectly safe to use.
