Canning -- Fruits

Why were my canned pears soft?

Rating: 0

Either the pears were overly ripe or the particular species of pear has a very high water content, which would lead to mushiness during canning. If consumers have fruit that is overly ripe that they would like to can, it is best to preserve in a heavy syrup. The high sugar content helps to retain the structure.
