The only concern is that the final processed product might be tough if the smoked sausages had been previously cooked before the canning processing. Remember the canning process is 75 minutes for pints and 90 minutes for quarts - this would be a severe heat treatment for a previously cooked product. It is also very important to add an appropriate broth - meat brother, water, or tomato juice depending on the desired flavor. Smoking is not a concern. In fact, it actually has a bacteriostatic (prevents bacterial growth) and bactericidal (kills bacteria) effect.
