What should I do if liquid is lost from my jars?

If liquid is lost from jars during processing, the food is still safe to eat, if sealed, but the quality will deteriorate quickly. Food above the liquid line will darken. To help prevent liquid loss, don't over-pack the jars. Leave the recommended amount of headspace. Try to maintain a steady pressure. Pressure that fluctuates encourages liquid loss. Maintain an even temperature for the range element. Do not try to hasten the reduction of pressure in the canner when the processing time is completed. Remove air bubbles from jars before processing.
