Can honey be stored in the refrigerator or freezer?
Honey will crystallize quickly in the refrigerator or freezer. Howeer, this crystallization can be reversed. Heat a pan of several inches of water to a boiling point. Remove from stove and place jar of honey in the hot water. Stir until crystals dissolve. Decrystallization can also be done in the microwave. Remove the jar lid and pour honey into a microwave safe container if it is not already in such a container. Microwave for 30 second intervals, stirring to distribute heat after each interval. Overheating will result in color and flavor changes. Honey should be stored in a cool, dry place.
Creamed honey or finely crystallized honey should be stored in the refrigerator. These are products that are intentionally crystallized and are not the same as honey that crystallizes in response to cold temperatures.
