Why won't my homemade ketchup thicken?

If tomato ketchup or sauce isn't thickening, there are two likely causes. First, check to see if it is being cooked with the lid off. Secondly, it may be cooking too slowly. It should be boiling gently in a pan with a lot of surface area to increase evaporation. Stir frequently.
