Can you make maraschino cherries at home?

Commercial maraschino cherries are made from light or dark sweet cherries. Sulfite is used to bleach the fruit. When they are pale yellow they are heated in water to drive off the sulfur dioxide; then heated in a syrup solution of sugar, water, almond extract and red food coloring. Sugar is added gradually to the syrup to keep the cherries from shriveling. It is difficult to duplicate these conditions at home especially since sulfur dioxide fumes should not be inhaled. How to Dry Fruit (HP Books) gives instructions for making Glace Fruit that may be used as a substitute. Glace Fruit is like the candied fruits used in fruit cakes.
