Can I dry green beans on strings?

I see no problem with drying the beans in this manner. The one reason that we do not recommend sun or air drying in North Carolina is that the climate tends to be very humid. The resulting products might not dry completely and so would be more prone to molding. Therefore, the recommendation has more to do with quality of the dried product than safety. I personally believe this product can be dried quickly by threading them on a string and hanging the string in the air. The only thing to remind the consumer of is that the beans must be dried thoroughly - brittle and not overly "leathery" in texture.
