What causes pickles to shrivel?

If the salt brine used in the soaking process of making fresh pack pickles is too strong, too much water may be removed from the cucumbers causing them to shrivel. If the sugar solution also is too strong, too much water will be removed from the cucumbers causing shriveling. Using smaller cucumbers, slicing cucumbers, or piercing cucumbers helps prevent shriveling in some of the very sweet pickle recipes.
