What would cause a raw white potato to become discolored?

When raw white potatoes are exposed to air, they become discolored. The discoloration changes from pink, to brown to gray. This color change develops from enzymatic browning and involves the amino acid, tyrosine. High moisture levels in the soil favor accumulation of tyrosine in the potato.
