What are rose hips?
Rose hips are the fruit of the rose plant. They are used in jellies and herb teas. They should be bright red in color, urn-shaped and nearly closed at the top. The fruit is ready in the fall. At this time, they will be deep in color, have a mellow, nutlike taste and be at their peak for Vitamin C content.
To extract the Vitamin C, the hips are cooked until tender and then left so the Vitamin C leaches into the water. One set of instructions follows: Gather rose hips. Chill them and remove blossom ends and stems and wash. For each cup of rose hips, bring 1-1/2 cups water to a rolling boil. Add rose hips. Cover and simmer 15 minutes. Mash with a fork or potato masher. Let stand in glass bowl 24 hours. Strain off extract, bring to a rolling boil and add two tablespoons lemon juice for each pint. Store in refrigerator or freeze.
