You may substitute sodium sulfite or sodium or potassium metabisulfite. These ingredients may be obtained from your local pharmacy. To pre-treat fruits, prepare a solution of one tablespoon of sodium bisulfite, or two tablespoons of sodium sulfite, or four tablespoons of sodium metalbisulfite in one gallon of water. Place sliced fruit into the solution as soon as it is sliced. Soak slices for at least 5 minutes and halves for at least 15 minutes. After soaking is completed, drain the fruit and rinse with cold water. The fruit is now ready for drying. Persons allergic to sulphur should not use products treated with these products.
