How do you soften hardened and dried out brown sugar?
Store brown sugar in an airtight container. If it does dry out and harden, follow the directions below for softening it.
Empty the brown sugar into a rustproof container. Place a piece of plastic wrap or foil on top of the sugar. Fold several paper towels into a square and dampen them (not dripping wet). Place the damp towels on the plastic or foil, and seal the container tightly. The sugar will absorb the moisture and become soft in a half-day. Remove the paper towels and store the sugar in the tightly sealed container.
To soften brown sugar quickly, heat it in a 250 degrees F oven. Watch it carefully and as soon as it has softened, measure the amount you need. When the sugar cools, it will become hard again and should be softened using the method above.
