How should cooked seafood be stored?

Refrigerate any cooked food as soon as possible after cooking, always within two hours. Refrigerate or freeze cooked seafood (or meat) in covered shallow pans, not deep containers, so that all of the product will freeze quickly. Always leave some space around containers for cold air to circulate.
