What causes an uncooked egg to float in water and is it safe to eat?

Rating: 50

As eggs age, the air cell gets larger and they are more likely to float. These eggs are safe to eat if they are not past the expiration date printed on the carton. They must also be thoroughly cooked. SOURCE: Dr. Julie Northcutt, Department of Food Science and Human Nutrition, Clemson University, Clemson, SC (April 2008)
