What makes hard-cooked eggs difficult to peel?

Rating: 92

Fresh eggs are more difficult to peel than are those that are a little older. This is because the membrane just beneath the shell sticks very tightly to the shell. Experts recommend hard-cooking eggs that are close to the expiration date.
