What types of foods can a catered meal operation prepare?

Catered meals operations are schools that provide meals with limited on-site food preparation.  No foods can be cooked on-site in this type of an operation.  Also, all meals prepared off-site must come from a foodservice operator who is permitted by the State of North Carolina.  The only other type of food that can be served are commercially packaged items that are in individual portion sizes.  If any food preparation is conducted, then the site will be classified as a commercial kitchen and will be required to meet all commercial kitchen standards.
