 Does each cottage need two binders or can they have one set for the entire site?
It depends. If there is one foodservice manager for the entire site and
this individual is in each of the cottages every day, then only two
binders are needed -- one for the menu/recipes and the second with the
Home-style Kitchen HACCP Plan. If each cottage has their own
foodservice manager or the manager cannot be in each cottage each
day and assigns management responsibilities to another individual, then
each cottage must have the two binders.
