Do a la carte items need to be identified on the production record?

USDA requires only items that are served as part of the reimbursable meal be recorded on the production record. Some Child Nutrition Directors require additional production records (especially in High Schools with an extensive a la carte menu) to track production, service, and leftovers for these items. Recording a la carte item is probably a local decision.  

NOTE:  While USDA does not require this, it is highly adviced that these items are recorded. Any food can cause foodborne illness not just reimburseable meals.  Therefore, it is important to report and monitor the safety of every menu item that is sold in the school cafeteria.
