I do not have a three-compartment sink so how do I report this on the daily inspection form?

You do not need to have a three-compartment sink.  If all items can be effectively washed, rinsed, and sanitized in a dishmachine, then you do not need to have a three-compartment sink.  

Therefore, on the Daily -- Operation Inspection form, in the column labeled "Three-compartment sink" write N/A in each cell down the entire column.  

If you have a three-compartment sink and are not using it on a given day, draw a line through the cell in the column labeled "Three-compartment sink" for that day.
