How do I determine the correct operating pressure for my dishmachine?

One will need to refer to the equipment manual to determine at what pressure the dishmachine should be operating. If you cannot locate the equipment manual and are uncertain, contact the Environmental Health Specialist who conducted the last inspection, they should be able to help you determine the correct operating pressure.
