Can we use our refrigerator and freezer forms instead of the one in the HACCP Plan?Yes under certain circumstances. Alternate forms to the monitoring forms that are currently in 2:6 Monitoring and Recordkeeping of the SC School HACCP Plan must be submitted in writing to the School Nutrition staff for their approval. The process for doing so is still being developed and when finalized will be shared with all school districts. The alternate forms must be submitted along with the alternate Production Plan. When approved, the alternate HACCP records will then become a part of the production record. The only forms that cannot be modified are the 2-2: School Description, 2-3: Operation Assessment, and the Food Safety Checklist for New Workers (page 15 in 2-4: Prerequisite Programs).
