Is "Peach Schnapps Cake" safe to eat?

Yes. The recipe calls for combining 1 can of peaches, 1/2 cup of orange juice, 1/2 cup of peach schnapps, and 1 cup of sugar and letting it sit overnight. It does not say to refrigerate this mixture. The next day this "overnight" mixture is combined with the remaining ingredients (eggs, cake mix, pudding mix, oil, nuts) and is baked. It would be safe for these reasons: (1) the peaches and orange juice are high-acid and will not support the growth of pathogens so it will be safe; (2) the schnapps is alcohol and so should act as a minor preservative to prevent the rapid growth of spoilage organisms, and (3) the sugar will bind some of the water in the peaches and orange juice so that pathogens will not grow.
