Why do canned beets sometimes turn black?

The blackening of home canned beets is a sign of spoilage. No unusual odor or gas may be detected. The black color may extend throughout the beet. A distinct medicinal flavor may be detected if unintentionally consumed. The darkening is characteristic of a reaction between the bacteria and iron. Do not consumer the product.
