Can you reprocess jars of food in which the lids have not sealed?

Be sure to check all jars to see if the lids sealed after the jars have cooled. If a lid failed to seal, remove the lid and check for cracks or uneven areas on the sealing rim of the jar. If the jar is in good condition, prepare a new lid according to the manufacturers direction and place it on the jar. Reprocessing must be done within 24 hours of the initial processing. If more than 24 hours have passed, discard the food. Alternatives are to remove some food so there is 1-1/2 inches of headspace and freeze the product in the jar. Or, refrigerate the product and use within several days.
