Can I blanch corn on the cob in the microwave?

There are no microwave blanching instructions for blanching corn on the cob because by the time you heat the corn sufficiently for the cob to become heated the corn is fully cooked. The cob must be heated through to destroy enzymes that would cause deterioration of the corn during storage. When the corn is reheated after freezing, it will be overcooked. Under blanching produces off flavored products. Stovetop blanching in water or steam is recommended.
