What is Harts Horn?

Harts horn, hartshorn, or baking ammonia is a leavening agent used in German anise-flavored cookies, Springerle. It is ammonium bicarbonate and may be obtained at the pharmacy. If the consumer wants a substitute, use the Springele recipe in Joy of Cooking that uses baking powder.
