How do I store spices and seasonings?

Ground spices tend to lose their flavor over time and should be replaced at least once a year. Date jars or cans when purchased. Sotre in dark, non-absorbent containers in a dry, cool area. Spices and seasonings can also be frozen but some changes might take place. For example, pepper, cloves, garlic, green pepper, imitation vanilla, and some herbs tend to get strong and bitter. Onion and paprika change flavor during frozen storage. Celery seasonings become stronger. Curry may develop a musty off-flavor. When using seasonings and spices in mixed dishes, season lightly before freezing and add additional seasoning when reheating or serving.
