Can a consumer reprocess canned some tomatoes that were canned three days ago?
USDA recommends that canned foods that have not sealed be reprocessed if more than 24 hours has passed since the initial canning because of the possibility of botulinum growth and toxin formation. Therefore, to be safe, it is recommended that the product be discarded. Freezing will not destroy the organisms or the toxin so would not be a safe alternative.
